Railroad Meatloaf

Found the recipe for this and just had to try it.  It was posted by Bo at Bo's Bowl.  You really should go to his blog and read how he came up with the name.  It's really kind of cute.  Anyway, I usually make a lazy-mans' meat loaf (recipe below).  It's easy and good, but a new recipe is always a good thing.  This is almost a BBQ meatloaf, but it is really tangy and delicious.  There are a couple of things missing from the recipe, but anyone who's been around the kitchen a few times will know what to do.  Also, I used oatmeal instead of bread crumbs.  I think oatmeal in a meatloaf helps it stay moister (JMO).

Lazy-Mans' Meatloaf

2 lbs. ground beef ( I use 95% lean)
1 small onion, chopped, or 1/4 c minced onion
1/2 red bell pepper, chopped
6 oz V-8 juice
1 tsp Worcestershire sauce
1 egg
1 1/2 c quick cooking oats
Salt and pepper to taste

Throw all of it into a bowl.  Mix it up good by hand.  Put in a loaf pan, or free form and place in a baking dish.  Bake at 350 for 1 hour.  Let rest for 15 to 20 minutes.  Slice it up and eat.

Usually served with baked spuds and frozen white corn with a little chopped bell pepper, salt, pepper and a fair amount of butter.
